Receitas

Carne de porco à Alentejana

Ingredientes:


700g de carne de porco (lombo)
350g de ameijoa
200ml de cerveja


1 folha de louro
2 dentes de alho
3c. de sopa de massa pimentão


1c. de sopa de mostarda
1 caldo de galinha ou de carne
Azeite q.b.


Pimenta q.b.
Tabasco q.b.
Sal q.b.


Salsa q.b.
Sumo de limão q.b.


Preparação:


Corte a carne de porco em quadrados não muito grandes.


Num recipiente coloque a carne de porco previamente cortada com a cerveja, o azeite, os alhos esmagados, a folha de louro, o caldo, sal, pimenta, massa pimentão, Tabasco e mostarda.

Cubra a carne toda com a marinada e deixe marinar 4 a 5 horas ou de um dia para outro.


Coloque a amêijoas em água com sal para retirar a areia.
Depois de marinar retire a carne da marinada e loure-a numa frigideira com um fio de azeite.

Depois de loura coloque numa panela com a restante marinada (retire os alhos).


Deixe ferver e apurar durante alguns minutos, acrescente mais cerveja se assim for necessário.


Por último acrescente as amêijoas e tempere de sal e pimenta. Polvilhe com salsa picada e algumas gotas de sumo de limão.
Deixe ferver até as amêijoas abrirem.


Sirva com batata frita aos cubos.
