Cheesecake de Manga

Ingredientes:

400g de queijo fresco
2 iogurtes naturais

1 lata de leite condensado
1 lata (800g) de polpa de manga
1 pacote de bolacha Maria

6 colheres (sopa) de manteiga
10 folhas de gelatina

Preparação:

Reduza as bolachas a pó. Junte a manteiga derretida e misture bem.
Forre o fundo de uma forma de mola com esta massa e alise bem.

Ponha a gelatina de molho em água fria. (em separado, 8 num recipiente e 2 noutro)

Numa taça, misture o leite condensado com o queijo, os iogurtes e 700g de polpa de manga. Mexa muito bem com a batedeira até ficar um creme liso.

Leve 8 folhas de gelatina ao lume, durante 30 segundos, com duas colheres de água. Junte ao creme, mexendo bem.

Verta o creme por cima da bolacha e leve ao frigorífico, 5 horas.

Leve a restante polpa de manga ao lume e junte as 2 folhas de gelatina, sem deixar ferver.
Depois de frio, cubra com esta polpa o creme de queijo e leve novamente ao frigorífico até solidificar.
Enfeite com fatias de manga.
