Cheesecake de Frutos de Verão

Cheesecake:

200g de queijo creme
1 pacote de natas magras
1 lata de leite condensado magro

1 iogurte natural
raspa e sumo de 1 limão

8 folhas de gelatina
300g de bolacha maria
100g de manteiga

Compota:

250g de frutos vermelhos congelados
100g de açúcar amarelo
1 pau de canela

1 casca de limão
framboesas e mirtilos frescos q.b.
folhas de hortelã

Preparação:

Triture as bolachas e junte-as à manteiga amolecida. Amasse de modo a formar uma massa e coloque-a no fundo da forma, de modo a cobrir todo o fundo. Reserve no frigorifico.

Bata as natas até estarem bem firmes. Adicione o leite condensado e o queijo creme e continue a bater. Por fim junte o iogurte e a raspa do limão. Hidrate a gelatina em água fria, durante 5 minutos. Escorra-a e leve-a ao microondas com o sumo do limão durante 40segundos. Adicione ao creme de queijo e envolva bem.

Coloque este creme sobre a base de bolacha e leve ao frigorifico, pelo menos durante 2 horas.

Compota:

Leve ao lume os frutos vermelhos com o açúcar, o pau de canela, a casca do limão. Deixe ferver durante 20 minutos, até engrossar. Deixe arrefecer e depois leve ao frigorifico.
Desenforme o cheesecake e cubra-o com a compota e no centro coloque alguns frutos vermelhos e folhas de hortelã.
