Pudins

Pudim de ovos à antiga

Ingredientes:
Frutos vermelhos para decorar

Caramelo:
0,5 dl de água
250g de açúcar

Pudim:
2 dl de água
500g de açúcar

20 gemas
1 colher sopa de farinha

Preparação

Para o caramelo, leve a água ao lume com o açúcar e deixe ferver, até atingir ponto de caramelo, que se verifica quando o açúcar perde toda a água e ganha uma cor dourada e um cheiro característico.
Retire do calor, verta numa forma de chaminé, com 23 cm de diâmetro, e rode para untar.
Prepare o pudim, levando a água ao lume com o açúcar, deixe ferver por dois minutos.

Retire do calor e deixe amornar.
À parte, misture as gemas com a farinha, com a ajuda de uma vara de arames.
Verta a calda, em fio mexendo sempre.

Verta na forma e leve ao forno, em banho-maria a 190ºC durante cerca de 40 minutos.
Retire o pudim depois de cozido, deixe-o arrefecer bem e desenforme-o sobre um prato de servir.
Decore com frutos vermelhos e sirva de seguida.
